For we know in part, and we prophesy in part?

I would translate it like this:
"by degrees we learn, we experience and so by degrees we prophesy"

But here you do it yourself, look at the definitions of the words below, look at how the Greek is written and let the Spirit of Truth reveal to you the true meaning as only HE can. Say it out loud to yourself, hear yourself say it. What do you think? ASK HIM?

In: 1537 ek or ex- = out of, from, by, away from

Part:
3313 meros-
    1. a part
  • a) a part due or assigned to one
  • b) lot, destiny
    2. one of the constituent parts of a whole
  • a) in part, partly, in a measure, to some degree, as respects a part, severally, individually
  • b) any particular, in regard to this, in this respect

For: 1063 gar- = for

we know:
    1097 ginosko-
  • 1. to learn to know, to come to know, to get a knowledge by perception, to feel, to become known

And: 2532 kai- = and, also, even, indeed, but

Prophesy:
4395 propheteuo- = to prophesy, to be a prophet, to speak forth by divine inspirations, to predict:

Now what do you think the Word is saying to you? That's right, to you specifically. God speaks to us all individually so that we can all understand according to our own internal language. So what is God through the agency of the Holy Spirit speaking to you in this verse?

Looking at this, I believe what is being said is: "that we do know, or come to know although our learning comes in parts or stages".

It is never that we cannot know. We are just not able to know everything all at once.
